This is one to share with friends. A standard small Camembert cheese (about 4 inches in diameter) is enough for a starter for four people.

This dish would also make a light meal for two people - perhaps with a mixed salad on the side?

You need a circular oven-proof dish just big enough for the Camembert. Put a tablespoon of good-quality olive oil in the dish, then wipe it around with a piece of kitchen towel.

Plonk the unwrapped cheese on top of the oil and make a dozen or so slits in the top of the cheese with a knife.

Smear a teaspoon of sun-dried tomato paste over the top of the cheese. Then, pour over a tablespoon of white wine vinegar, a teaspoon of balsamic vinegar, another tablespoon of good-quality olive oil and a dozen or so capers (pickled from a jar).

Put the dish in a pre-heated oven at Gas mark 5 (180C) for about ten minutes. Serve hot at the table, in the dish used for cooking, with plenty of fresh crusty bread (perhaps a french stick?) to scoop up the soft melted cheese. Yum!
